I had some pork cubes in the refrigerator that needed to be eaten. The rest of my pantry was running pretty low, so I had to make do with what I had. In the end, it worked out well! I raided the fridge, freezer, and pantry. This is what I could find. I cooked it […]
My wife and I often have slightly different tastes. I’m not crazy about mayo in most dishes. My wife loves mayo. She gets egg salad on her sandwich. I get sliced eggs. We both get cayenne, and we’re both happy.
This was the first item I ever cooked sous vide. It’s also one of my two favorite things to cook sous vide (chicken being the second). Octopus is often served rubbery; it’s terrible. Tender octopus is amazing. Sous vide octopus is very tender. To get the details on how to sous vide an octopus, check […]

A friend of mine found these oyster crabs at a local market. I’d never heard of them before, so I did a little research. They’re not a baby soft-shelled crab. That’s incorrect. They’re their own species. You can eat both the oyster and the crab. The crab can be cooked or eaten raw. Some people […]
Unfortunately, there’s not enough time in the day to cook every meal. That’s why making things that reheat well and are easy to portion are always good things on a weeknight. Quiches and pies meet both of these criteria and are great for any time of the day. Last night, I went with a spinach and […]
I went to a new fish market, Greenpoint Fish & Lobster, that opened up by me. It’s such a relief to finally have a decent fish source in the Williamsburg/Greenpoint area. All of the fish seemed incredibly fresh, and there wasn’t that awful rotten fish smell. When you walk into the store/restaurant, you smell a […]
Lets face it. Bacon is awesome. It makes everything better. Bad bacon is better than almost every other food. Good bacon is magical. Make good bacon.
This was just an experiment. I separated three eggs, whipped the whites to stiff peaks, folded together with salt, pepper, and cayenne, and baked. It was basically a light, airy omelet. I was hoping for more soufflé creaminess, but it was still good. Probably not worth the effort though. I love soft omelets.
A friend of mine requested clam pizza over the weekend. He got it. I got the recipe for the sauce from Bon Appetit. It was good. A little too salty but good. I made my Neapolitan Pizza Dough and used Heston Blumenthal’s cooking method. It turned out really well.
