Dinner Party 2

The theme of this dinner was fat.  It wasn’t intentional, but this was a heavy meal.  I was happy!

Foie Gras Parfait

Course 1

This is another Chef Steps recipe.  It was really good, but the portion sizes were way too big.  Also, it was screaming to be served on toast.

Rigatoni alle Vongole

Course 2

This is a pretty straight forward dish.  Cook pasta, cook clams in some garlic and deglaze with white wine.  Add parsley and fried jamón.

70 Day Dry-Aged Porterhouse

Course 3

Garlic, thyme, butter and fried onions.  Life is good.  (No photo, but there was a side of duck fat mashed potatoes.)

Dinner Party 1

My wife and I like throwing dinner parties.  This meal was a celebration of a recent engagement.  They asked me to cook them dinner, so I gave them this.

Ankimo & Hamachi

Ankimo with scallion, Hamachi with Jalapeño, soy sauce, and yuzu juice.   

 

Pea Soup

Course 3

Chilled pea soup with Parmesan foam and bacon.  One of my favorite soups.  I’ll post a recipe for this another day.

Salmon 104 °F

 Course 4

I got this recipe from Chef Steps.  This is not their best recipe.  The salmon tastes like mushy cured salmon.  I made the mistake of over-whipping the horseradish cream in my isi whipper.

This recipe is from Roberta’s Cookbook.  The whole book is great, but I especially love this recipe.  I’m going to do another post on just this recipe, so be on the lookout for it.

 

Dry-Aged Steak

Served over chimichurri and caramelized onions with garlic butter and fried panko.
